SALAD
4 cups chopped mixed lettuces (romaine, iceberg, radicchio)
1/2 cup diced carrots
1/2 cup peeled, seeded and diced cucumbers
1/2 cup drained and rinsed canned chickpeas
Salt and fresh-ground black pepper, to taste
Max’s Lemon Vinaigrette (recipe given)
1/2 cup diced tomatoes
Toss together the lettuces, carrots, cucumbers and chickpeas. Add the salt, pepper and vinaigrette. Toss lightly until mixed thoroughly. Mound on individual salad plates and sprinkle with diced tomatoes. Serve immediately. Makes 6 cups.
