Pappas Restaurant’s Greek salad dressing
1 tablespoon minced garlic
1/2 teaspoon garlic salt
4 sprigs fresh oregano, leaves picked, or 1/2 teaspoon dried
1/2 teaspoon dill
2 tablespoons red wine vinegar
2 tablespoons white vinegar
2 tablespoons honey
1 cup olive oil
Salt and black pepper, to taste
1 Using a food processor fitted with a blade attachment, combine the fresh garlic, garlic salt, oregano, dill, red and white vinegars and honey. Process until blended. Slowly add the olive oil through the feed tube until incorporated.
2 Season with salt and pepper, to taste. Store refrigerated in an airtight container.
Makes about 1 1/4 cups.
